How to make Soup Stock from Chicken Feet

For this recipe, you will need:

  • 2 lbs. of chicken feet
  • Three stalks of celery
  • Three carrots
  • A large onion
  • Water to cover

I was hyperventilating ;) when I saw you head over to the sink for your water, until I saw you have an under-the-sink filter - yay! A splash of apple cider vinegar added to the water will help extract even more of the collagen and minerals from the feet into the broth. No need to measure, but anywhere from 2-4 tablespoons for a gallon of water will do the trick. Also, a longer simmer, up to 24 hours will extract even more flavor and other goodies from the feet.
